Tesco rainbow cauliflower

UK retailer Tesco has teamed up with local grower Clements to produce an exclusive range of differently coloured cauliflowers to market in so-called 'rainbow packs'.

The green, pink and white varieties have been developed with the intention of increasing consumption of the vegetable among young consumers, who have traditionally shied away from eating the brassica.

According to figures published by analyst Kantar Worldpanel, there has been a 6.5 per cent decline in cauliflower sales in the UK over the past two years, raising concerns over the future potential for production to continue in the country.

The 320g rainbow packs will be sold for £1.50 (€1.72).

Tesco vegetables buyer Jeni Gray commented: 'These cauliflowers are almost works of art and have a real wow factor that should really create a stir with shoppers and hopefully children at dinner time.'

She added: 'We know from sales that whenever we bring out innovative new produce such as pink and yellow mushrooms and black raspberries, they go down well with shoppers so we're hoping that will be the case here.'
