As part of the campaign to promote Chilean Hass avocados, chef Louise Wagstaffe will be visiting universities across the UK to give out cookery advice and demonstrations to catering and hospitality students.

The aim of the tour, which includes visits to Thames Valley University and Westminster Kingsway College, is to promote the health benefits of avocados as well as their versatility in cooking.

'This is the second year that we have been lucky enough to receive a visit from the avocado ambassador,' said Rachel Hilton, food studies lecturer at the tour's first point of call, University College Birmingham. 'The demos are great for the students because we have the opportunity to learn more about this delicious fruit, as well as ways avocados can be used in recipes. Many of my students have been converted to avocado lovers since Louise's visit.'

Ambassador Louis added: 'I love working with avocados because they're so versatile and fresh. It amazes me how few people in the UK eat them. These demonstrations are a great way of teaching young chefs the benefits of using them by creating some delicious dishes.'
