Orkney Herring Company serves up seaweed

The Orkney Herring Company is bringing sea relish to the UK, which is made from seaweed and is tipping the product for UK success.

The seaweed (Phacophyceae) is being produced by a Danish firm as a vegetarian alternative to fish roe, such as caviar. It is harvested daily by fishermen, but a close watch is being kept on long-term supplies and only five per cent of the alginate is harvested in any one year. After cleaning, the seaweed is processed and is available in either black or red.

Trevor Ware, sales manager for the south of England at the Orkney Herring Company said: "We believe this product has a great future. With the price of caviar escalating sea relish is an ideal alternative. It is an adaptable and convenient product and it has a two-year shelf-life."

Sea relish can be used in either hot or cold dishes, it has no cholesterol and is low in salt. The relish can be enhanced by natural flavours such as anchovy or Thai fish oil.

The Orkney Herring Company said that the new relish can be enjoyed as a snack, garnish or added to dishes and is expecting the relish to be taken up by top restaurateurs and caterers who are looking to add extra taste and presentation to recipes

The relish is packed in 150gm glass consumer pots and is available wholesale for £1.20. Larger 500gm re-sealable plastic pots will cost around £6.
