Sir Francis Mackay is urging the food industry to increase the healthy options to consumers

Sir Francis Mackay, the chairman of the Compass Group has urged the food industry to shape up and increase the healthy options on offer to the consumer.

Speaking at the Sainsbury's City Food Lecture, 2004, Mackay, pictured, argued that the future of the food industry is steamed broccoli, not fried burgers.

In an address entitled "Changing the Menu", he said: "Change in the food industry is relentless, it is global and it is increasing in pace. The eating habits and expectations of UK consumers have changed out of all recognition within the last 10 years and this will continue."

Sir Francis argued that because of heightened consumer expectations all sectors of the food industry must be prepared. He said: "All of us - whether food producers, processors, suppliers, retailers or caterers - need to consider what next?"

Sir Francis said compass has already acted. He said: "We have developed a concept for secondary schools called Choices Café. On offer is a range of rice and pasta dishes, interesting and well-presented salads, creatively presented vegetables, fruit based desserts and fresh fruit salads.

"I believe that the challenges ahead, which the industry faces, can be best met in a spirit of openness and co-operation right through the food-chain, with the constant aim of delivering what the consumers want."
