Blackberries to be novelties

UK food researcher Russell Mumper is exploring the potential development of new, innovative uses of blackberries in foods, according to the Food & Drink Innovation Network.

Mumper is working in collaboration with Paige Shumate Short at the University of Kentucky. Their aim is to provide blackberries to the public in new ways, be it via blackberry tea or even chewing gum.

The two researchers previously established Four Tigers, a company that will look at the development of blackberry extracts in food and will seek to obtain licensing partners to further its aims.

FDIN reports that the company is looking for new partners such as chewing gum firms to help promote its use of blackberry extracts in chewing gum, with the researchers behind the project also keen to develop a greater range of foods containing blackberry extracts, such as tea.

University researchers also believe their efforts will improve the health benefits offered by blackberries, by providing people with a greater intake of the berries' extracts.
