Freeze dried sun dried tomato granules will be making their debut at the Food and Drink Expo in March. Looking very similar to freeze dried coffee the concept was devised by Mike Farr who established Pershore-based Spectrum Foods Paste Ltd three years ago.

He says 'The freeze dried is something absolutely new. It has great potential for bakers, food manufacturers and for home cooking. Sprinkled on hot pasta it is hydrated by the steam and provides an instant, wonderful flavour. Its equally good on pizzas and many other dishes.' It will be one of a range of sun dried Turkish tomato products the company will be exhibiting. There will be 100g retail packs of sun dried tomatoes aimed at the wholesale markets. He adds 'Our research shows that consumers do not buy sun dried tomatoes because they are expansive and also because they don't know what to do with them.

'Our packs will retail at a much lower cost than those available in the supermarkets and we are planning on putting recipes and cooking tips on them. There will also be a range of other products, such as dried tomatoes in different marinades.

'We are into sun dried in a big way using Turkish because I believe they are the best. We make sun dried tomato pastes for all the big manufacturers. The new range though is targeted at a wide market and, for consumers, we are investigating the possibility of various ways of trading, including mail order.'
