Perfect for BBQs: Snowbergines at Waitrose 

Waitrose has launched Dutch-grown ‘snowbergines’ as part of its speciality aubergine range.

Available from now until June for £1.35 each, the white-skinned aubergines are described as creamier and milder than their purple counterparts.

They have a better capacity to take on other flavours, including tomatoes, spices or cheese, and they absorb less moisture when cooking, meaning they soak up less oil, resulting in a lower calorie dish.

Early varieties of aubergine were traditionally white skinned, prompted the name 'eggplant' in America, as they resembled goose eggs, Waitrose said.

The retailer said snowbergines are best served roasted or chargrilled on a BBQ.

Waitrose vegetable buyer Jade Symonds said: “Aubergines are particularly popular during the summer months as they are great for grilling.

“It's the perfect time to introduce a new speciality range of aubergines, which includes our 'snowbergine' as well as a striking purple and white striped variety.”
