Australian researchers are investigating profitable ways to use class 2 bananas in an effort to boost returns to growers.

A Department of Employment, Economic Development and Innovation (DEEDI) research and development forum was held in Cairns, Queensland recently to address the issue, bringing together representatives from across the banana value chain.

“DEEDI and CSIRO research scientists put forward product concepts to the industry and found interest in fresh-cut, ready-to-eat banana snacks, juices and high-pressure processing,” said DEEDI scientist Kent Fanning in a statement.

“Horticulture Australia Limited (HAL) funded the development work for the product concepts using the national banana levy and matched funds from the Federal Government.

“The food service industry might be interested in processed fruit, fruit slices and purees. Families may find ready-to-eat banana snacks a convenient and healthy takeaway snack ideal for their kids’ lunch boxes.

“Another concept we looked at - banana spreads for sandwiches and toast - may be of particular interest to the dairy industry. More market research is required, but these ideas are worth pursuing if we want to expand the banana industry, reduce waste and make it more profitable.”
