Sweetened dried cranberries (SDCs) supplied by US-giant Ocean Spray have been incorporated into a new snack bar.
Recently launched by Kelsen Bisca, Denmark’s largest exporter of biscuits, the low-fat cereal grain bar contains hips and honey as well as five per cent cranberries. "The aim was to devise a snack bar that not only tasted good but was healthy too," said Kelsen Bisca. "Associated with a variety of health benefits, the cranberry fitted the brief perfectly."
"We identified a gap in the market for a tasty, filling and healthy biscuit bar snack in a convenient, individual format rather than traditional roll-wrapping;” explained Grethe Kjølby, marketing manager at Kelsen Bisca. “We knew that it would be difficult to achieve both taste and health with grains alone, so looked at including various fruit ingredients. Apple and strawberry fell short in terms of health appeal and failed to maintain their taste profile after baking. We opted for cranberry owing to its substantiated health benefits and ability to retain its taste, texture and colour throughout baking and in the end product.”
Three variants of the Bisca bar - cranberry, blackcurrant plus tomato and black olives - are aimed primarily at females between the ages of 25-45. Distributed initially in Scandinavia, Bisca is now planning to export this product to other countries.

The sweetened dried cranberry is a sugar-infused, long-lasting dried fruit piece, with a vivid red colour and a sweet/tart flavour. Produced by slicing superior grade cranberries and then infusing a high Brix sucrose/cranberry solution until a specific equilibrate Brix range is reached, the dried fruit contains no added colours, flavours or preservatives. Ocean Spray's sweetened dried cranberry is just one ingredient in an extensive portfolio.
Further ingredients include frozen cranberries, fruit extract powders and award-winning flavoured fruit pieces - all available year-round.
