San Luis Cooling is to open a new company after spotting a gap in the market for locally processed fresh-cut fruit.

Lydia’s Specialty Fruit, which is due to start operating in the summer, expects to supply 10m lbs of tropical and other snack fruit to customers in Arizona and south-eastern California in its first year.

The company will operate from a newly built 24,000 sq ft facility.
