After convincing the Food Standards Agency to revise its recommendation that mushrooms must be peeled and cooked, the Mushroom Bureau has published recipes from Mmm…Mushrooms (£5) and The Mushroom Cookbook (£3.99) to illustrate that mushrooms are a no waste vegetable.

The national press is being targeted with PR that tells them there is no need to peel mushrooms, and no need to remove their stalks. This is particularly important, as the nutrition is stored just under the skin.

Supermarkets and independent retailers have been advised of this change and are currently taking down any signs in their stores and changing their mushroom labels.
