The parsnip star shone brightly over a dull Christmas vegetable scene

After a slow, disappointing Christmas, the vegetable industry has experienced a rush in demand in the first week of the New Year.

Reports coming in suggest that the cold snap of weather after Christmas has created a demand for traditional root vegetables and winter foods.

Traditionally a time when consumers over indulge, Christmas is normally a period of high demand, but this year, insiders say, it was just a normal week.

“We experienced a constant demand for parsnips, but apart from that Christmas was a very disappointing time,” said Colin Galbraith, director of Fresh World Limited. “Contracts have been running as normal, but the level of demand has been very low. Fortunately we anticipated this and we were not overstocked. But last week, the demand for root vegetables was enormous; it shifted from very little interest to excess purchase.”
