The latest deal has come from an ice-cream manufacturer which is using the company's ginger puree in one of its products. Other ice-cream companies source Beacon's caramelised banana, citrus zests and roasted and grilled strawberries.

But Beacon md Edward Gough sees even more potential. 'Our roasted fruit purees are ideal for dessert and drink manufacturers and I am really surprised that our caramelised pineapple isn't included in more products because the flavour works really well in desserts,' said Gough. 'At the moment our caramelised pineapple is used more in sandwiches, pizza toppings and chutneys.'
