Nestle have trialled ways of using purple sweet potato puffs in cereals

Multi-national food company Nestle has filed a patent to produce purple sweet potato puffs for use in breakfast cereals and cereal bars.

The international patent covers the manufacturing processes and the dry-mix ingredients, reports bakery news website,bakeryandsnacks.com.

Nestle wrote in its patent filing: “It would be beneficial to provide crispy sweet potato products with a size and shape suitable for being added as inclusions in a breakfast cereal.”

Nestle said the problem had been to create a sweet potato product with a sufficiently low density to achieve a crispy texture.

The company said that it had achieved results by keeping the moisture content of ingredients in the extruder below 20 per cent, and maintaining the extruder barrel temperature below 150 degrees, reported bakery and snacks.

It said that the purple sweet potato was useful as consumers, especially those of Chi Chinese origins, perceived this variety to help digestion.

The dry ingredients mix for the purple sweet potato puffs can be made of sweet potato flour or flakes, but should preferably contain between 40 and 95 per cent sweet potato.
