The premium snacking tomato is part of the cooperative’s strategy of creating added value and adapting to new consumer demands

Fruit Logistica will serve as the backdrop for the launch of Unica Group’s SOLOH, a new premium snacking tomato. It is one of a range of new high value-added products that the cooperative will showcase at the fair.

“Designed to be eaten “as it comes” SOLOH stands out for its intense sweetness balanced with a refreshing acidity, offering a unique sensory experience with every bite and elevating the snacking category to a new level,” Unica said. “Its name reflects both its unique character and its Mediterranean origin, making it a premium offering within the tomato range.”

The launch of SOLOH comes in response to growing demand for healthy snacks, a trend that continues to gain traction across Europe and is driving new ways of consuming fruits and vegetables. According to Unica, “it is a premium snack, both in terms of flavour and visual appeal, yet accessible to everyone”.

Unica said it is committed to the continuous improvement of tomatoes to suit all consumers and all consumption occasions. Other innovative products in its range include its tomato potpourri tubs, which allow consumers to sample different varieties in small quantities.

In the aubergine category, meanwhile, the cooperative is seeking to attract younger consumers with recent additions such as the Delistra mini aubergine, expanding its offering with more versatile formats adapted to both home consumption and the professional sector. Delistra responds to the growth of single-parent households, couples without children, or people living alone, helping to prevent food waste. It is also ideal for new consumption methods, such as air frying.

Moreover, studies published in Food Bioscience have identified natural compounds rich in flavonoids and polyphenols in Delistra seeds that inhibit the growth of colon cancer cells in laboratory studies and animal models.

The second-tier cooperative also continues to develop new solutions to facilitate vegetable consumption, focusing on ready-to-eat and ready-to-cook formats, as well as products with currently in-demand ingredients, such as quinoa or caramelised vegetables.

At the same time, Unica is expanding its convenience product range with the launch of a new grated tomato made using high-pressure processing (HPP) technology, which preserves the flavour and nutritional benefits of freshly grated tomatoes. The product offers a shelf life of up to nine weeks, contributing to reducing food waste.

Unica’s membership is also growing, most recently with the incorporation of Cooperativa del Campo Guadiaro and San Martín del Tesorillo (Tesoricoop), both located in the Sierra de los Alcornocales (Cádiz). Together, these two cooperatives specialising in the production of organic avocados and citrus, have added 15,000 tonnes of produce annually to Unica’s sales volume, including 5,000 tonnes of avocados, which Unica has identified as a strategic product due to its increasing demand.
